Perfect Chicken Parmesan


Preparation Time: 5 minutes

Ingredients: 

2 large white meat chicken breasts, approximately 125g-150g 

150g of breadcrumbs (Panko brand works well) 

2 medium-sized eggs 

Pinch of salt and pepper 

5g of dried oregano 

150g of marinara sauce (store-bought or homemade will do equally well) 

2 slices of provolone cheese 

5g of parmesan cheese 


Directions: 

1. Cover the basket of the Tower air fryer with a lining of tin foil, leaving the edges uncovered to allow air to circulate through the basket. 

2. Preheat the air fryer to 180°C. In a mixing container, beat the eggs until fluffy and until the yolks and whites are fully combined, and set aside. 

3. In a separate mixing container, mix the breadcrumbs, oregano, salt and pepper, and set aside. 

4. One by one, dip the raw chicken breasts into the bowl with dry ingredients, coating both sides; then submerge into the bowl with wet ingredients, then dip again into the dry ingredients. This double coating will ensure an extra crisp-and-delicious air-fry! 

5. Lay the coated chicken breasts on the foil covering the Tower air fryer basket, in a single flat layer. Set the Tower air fryer timer for 10 minutes. 

6. After 10 minutes, the air fryer will turn off and the chicken should be mid-way cooked and the breaded coating starting to brown. Turn each piece of chicken over to ensure a full all-over fry. 

7. Reset the air fryer to 160°C for another 10 minutes. While the chicken is cooking, pour half the marinara sauce into a 7-inch heat-safe pan. 

8. After 15 minutes, when the air fryer shuts off, remove the fried chicken breasts using tongs and set in the marinara-covered pan. 

9. Sprinkle the rest of the marinara sauce over the fried chicken, then place the slices of provolone cheese atop both of them and sprinkle the parmesan cheese over the entire pan. 

10. Reset the air fryer to 180°C for 5 minutes. After 5 minutes, when the air fryer shuts off, remove the dish from the air fryer using tongs or oven mitts. 

11. The chicken will be perfectly crisped and the cheese melted and lightly toasted. Serve while hot!
