Crispy Southern Fried Chicken

5g cayenne pepper 

30g mustard powder 

30g oregano 

30g thyme

45g coconut milk 

1 beaten egg 

32g cauliflower 

32g gluten-free oats 

8 chicken drumsticks 


1. Ensure the Tower air fryer is preheated to 180°C. Lay out chicken and season with pepper and salt on all sides. 

2. Add all other ingredients to a blender, blending till a smooth-like breadcrumb mixture is created. Place in a bowl and add a beaten egg to another bowl. Dip chicken into breadcrumbs, then into the egg, and breadcrumbs once more. 

3. Place coated drumsticks into the Tower air fryer. Temperature should be 180°C, and set time to 20 minutes and cook 20 minutes. 

4. Bump up the temperature to 200°C degrees and cook another 5 minutes till crispy.
